This is our favourite thing to make for a pot luck barbecue. It goes with just about anything you can think of grilling, especially red snapper.

It’s dead easy to make, and everyone always asks for the recipe. Here it is:

fresh cucumber mango chutney

Diced mango
Diced cucumber (I like the small Lebanese ones)
Finely diced red onion
Chopped cilantro
Roasted and coarsely ground coriander seeds
Lime juice
Fresh red chile
Salt and pepper

Mix it all up and let it sit for a while in the fridge, stirring from time to time – the lime juice and salt will draw out the juices and improve the flavour. The key to making this perfect is tasting it as you go and adding more of what’s missing. Sounds obvious, I know, but it’s easy to forget.
